Canada accounts for 80% of the world's total maple syrup production (the remainder comes from the north-eastern United States). Quebec is the main syrup-producing province, with 93% of the national total; the remaining 7% is produced in Ontario, New Brunswick, and Nova Scotia. In 1999, farm cash receipts from the maple industry in Quebec rose to $139.6 million, a 13% increase over the 1998 figure. Quebec continues to be the leading maple products exporter, with 91% of total export sales. The following table shows the main export buyers for maple products.
These figures shed light on the export-oriented nature of the Canadian maple industry. Tighter quality controls at the production level would ensure the uniformity and high quality of both maple products and industry practices.
