Microwavable Sugar on Snow

 Ingredients  :

1 cup of maple syrup

 

Preparation :

Lightly grease an 8 cup bowl 1 cm from the top edge.  (This will prevent the syrup from over flowing).    Pour in 1 cup of maple syrup.    Cook for 7 minutes in the microwave.  (Cooking time may vary between microwaves)  Pour on clean snow … and enjoy!!!

 ** Should you have leftover maple sugar, stir the remaining mixture with a wooden spoon for 10 minutes and you will end up with maple butter.

Note :  The mixture is ready when drops of maple mixture form soft balls when dropped into a glass of cold water.

 

Gourmet maple syrup pie

Preparation and cooking time: 50 min

Ingredients

  • 1 L (4 cups) flour
  • 1 pinch salt
  • 500 ml (2 cups) vegetable shortening
  • 250 ml (1 cup) cold water
  • 125 ml (1/2 cup) vinegar
  • 1 egg
  • 90 ml (6 Tbsp) butter
  • 125 ml (1/2 cup) flour
  • 250 ml (1 cup) boiling water
  • 500 ml (2 cups) maple syrup

Method
Combine the flour, salt, and shortening. Add the vinegar and the egg to the water, blend into the flour mixture, and mix well. Chill dough for a day before rolling out.
Melt the butter and add the flour, the boiling water, and the maple syrup. Bring to a boil, stirring constantly. Pour into a piecrust and bake at 200o C (400o F) for about 35 min.

Maple syrup raisin pie

1 tart                      Preparation and cooking time: 30 min

Ingredients

  • 125 ml (1/2 cup) water
  • 30 ml (2 Tbsp) cornstarch
  • 250 ml (1 cup) maple syrup
  • 250 ml (1 cup) raisins
  • 1 piecrust

Method
In a saucepan, combine the water and the cornstarch. Mix in the syrup and the raisins. Bring to a boil and cook, stirring, until the mixture is thick and transparent, approximately 5 min. Let cool. Pour into the piecrust, decorate with strips of dough and bake in a very hot oven, at 220o C (425o F), for approximately 20 min or until the crust is nicely browned.

Fresh fruit delight with maple cream

Serves 4          Preparation, cooking, and refrigeration time: 60 min

Ingredients

  • 3 egg yolks
  • 80 ml (1/3 cup) granulated maple sugar
  • 175 ml (3/4 cup) whole milk
  • 60 ml (1/4 cup) flour
  • 80 ml (1/3 cup) maple syrup
  • Fresh fruit in season: apples, strawberries, nectarines, raspberries, blackberries, etc.

Method
Prepare the maple cream: In a round-bottomed bowl, beat the egg yolks with the sugar, using a whisk. Add 60 ml (1/4 cup) of the milk and the flour; beat again and set aside. Heat the rest of the milk and the syrup together in a saucepan. Pour over the egg yolk mixture, beating constantly. Return to the saucepan and cook for about 5 min over medium heat to thicken. Chill. At serving time, arrange fresh fruit around the edges of the plates and decorate the centres with maple cream, using a pastry bag. Sprinkle with granulated maple sugar and drizzle with maple syrup.

Maple caramel custard

Serves 8                        Preparation and cooking time: 50 min

Ingredients

  • 9 egg yolks
  • 1 L (4 cups) heavy cream (35% M.F.)
  • 125 ml (1/2 cup) maple syrup
  • 35 ml (2 Tbsp) pure malt scotch whiskey
  • Granulated maple sugar to sprinkle on top

Method
Preheat oven to 180o C (350
o F). In a large bowl, beat the egg yolks with the cream, the syrup, and the scotch. Pour the mixture into a saucepan and bring to a simmer. Strain and pour into 8 large custard cups. Place the custard cups in a bain-marie and bake for 30 to 40 min, until the custard is firm. Remove the custards from the water bath and chill them.
Just before serving, sprinkle with granulated maple sugar and put under the grill until golden.
